The Five Ingredient Quick Dinner

Want something easy, little mess, satisfying and healthy for dinner on a cold night? Try this one on for size.

Collard and Black Eye Pea Soup

4 cups chicken broth (try Swanson 33% reduced sodium, 100% fat free chicken broth)
8 oz collards
12 oz red potatoes, cubed
15.5 oz can diced unseasoned tomatoes
15.5 oz can of black eye peas, rinsed and drained

Bring the broth and 2 cups water to a boil. Add collards and simmer for 15 minutes. Add potatoes and tomatoes and bring to a simmer again, cook for 10-12 minutes, until potatoes are tender. Add peas and cook until warm, 2 minutes. Season with pepper to taste and serve immediately!
